Keith Eliot Mattos, also known as “Apa” and “Uncle Pancake,” 56, of Waimea, Hawaii, a former cook at Hawaiian Style Cafe in Waimea, scale mechanic at Automation Hawaii and Chang Scales, and an Army veteran, died at home. He was born in Honolulu. He is survived by wife Kimberly Puou-Mattos; daughters Stacey and Charlotte; hanai sons Jay Brewer Sr. and Jay Brewer Jr.; hanai daughters Luana and Lily Brewer; brothers Bernard Sr. and Carl-Denis; and sisters Wanda-Lee Corpus, Marie-Lyn Mattos, April-Jean Trusdell and Donna-Von Espinda. Visitation: 9 a.m. Jan. 7 at Hosoi Garden Mortuary, 30 N. Kukui St., Honolulu. Services: 10 a.m. Celebration of life reception to follow.
